A vegetable which is light green in color and grows on top of the ground in stalks. Contains large amounts of vitamin C, fiber and high levels of potassium. Is used to flavor soups, stews and is great on its own cut up with a little bit of peanut butter, cream cheese or ranch dressing. Is also considered one of the best low-calorie foods.
